SOUP RECIPE

Summer Borscht

10 cups water

Smoked Ham with bone

1 cup onion (finely chopped)

1 tbsp salt

 

6 cups cubed or diced potatoes

2 cups of finely chopped beet greens

2 cups finely chopped sorrel leaves

1/3  cup finely chopped dill greens

½ cup chopped onion greens

salt and pepper to taste

1-2 cups of cream (by preference)

1/3 cup flour (optional)

 

To make the soup stock - place the ham bone, water and salt in a large pot and boil for approximately one hour.  Remove ham bone (leaving small pieces of ham in broth) and add the potatoes and boil for 10-15 minutes till the potatoes are tender.  Add all the greens and boil for 5 minutes longer.

 

Mix the cream and flour together stirring to prevent lumps.  Then add to soup and bring to a gentle boil and simmer for a few minutes.

 

*Farmer sausage can be used instead of ham.
